Temperature guage readings vs. operating temperature

In the 10 years I owned mine I only saw the heat gauge in the high of 
center range once.  This was in stop & crawl traffic in Poplar Bluff 
Missouri on my way to Hot Springs Arkansas.  According to the 
date/time/temperature display at the Bank of America it was 104 F (40 
C).  But the temperature dropped below center within 3 km once I got 
on the highway.
A few bikes were out yesterday but there's too much winter sand on the 
roads to suit me.
